SURPRISE!
So i know its been like a billion years since I’ve baked and updated something for the MLP cupcake project so i just want to say… IM SORRRY IT TOOK SOO LONG AND SORRY FOR DERRRPPPING! T_T
Basicly…heres why it took me MONTHS to finally update
1. When I got back from India and Africa I lost my job because of that trip…no job, no money, no money for cupcake project >_<
2. Started down spiraling into a deep state of depression…it wasn’t pretty, i literally had no motivation to do anything at all
3.Computer died!! Without my computer and photoshop how am I suppose to edit the pictures for my posts?? :(
4. Culinary School……nuff said
5. I JUST GOT ENGAGED!! My Fiance popped the question at Club 33 Disneyland last week. Im like the most happiest person right now I can hardly contain myself xD
So Without Further ado here’s everyones favorite disastrous background pony that became an actual character on the show! And to no surprise Derpy Hooves was never going to be a cupcake….she was always going to be a Muffin of course!! soo SURPRISE!!! And not just any muffin…a bannana nut muffin!! Cause shes nuts!! Get it?? Okay i’ll shut up now and heres the recipie and to all my followers out their thanks for putting up with my insanity xD!

Derpy Hooves Banana “Derp” Muffins
Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 4 overripe bananas
- 1 cup brown sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup pecans, chopped
Preheat oven to 375 degrees F and lightly butter 2 muffin tins.
In a large bowl, combine the flour, baking soda, and salt; set aside. Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together like you mean it, for a good 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Mix in the dry ingredients just until incorporated. Fold in the nuts and the mashed bananas with a rubber spatula. Spoon the batter into the muffin tins to fill them about halfway. Give them a rap on the counter to get any air bubbles out.
Bake until a toothpick stuck in the muffins comes out clean, 18 to 20 minutes. Let cool for a few minutes before turning the muffins out. Serve warm or at room temperature.
****Twilight Sparkle, Princess Celestia, and Princess Luna are left in the project! Then I have two more cupcake projects underway that I will reveal after this project is finished…bake on guys and thanks for putting up with me for this long! xD
